    Prepare all the necessary ingredients. The flour and sugar should be at room temperature, and the milk should be warmed to 35-40 degrees. I find it convenient to heat the milk in the microwave; 30 seconds is enough for this.

    To warm milk, add yeast and mix well. To activate the yeast, be sure to add a little sugar—about 1 tablespoon. Also add 2-3 tablespoons of flour, mix thoroughly until smooth, and let it sit in a warm, draft-free place for 30 minutes. Usually, I place the starter in the oven. By the way, while the yeast is fermenting, and in general when kneading dough, you should avoid making noise, arguing, or thinking negative thoughts.

    After 30 minutes, a fluffy layer will form on the surface, which will soon start to collapse. This means the starter is ready.

    In a separate bowl, mix the eggs with sugar and vanilla sugar. Melt the butter and add it to the egg-sugar mixture. There's no need to beat vigorously—just combine all the ingredients well.

    Add the sponge to the prepared egg mixture and mix everything thoroughly.

    Gradually add the sifted high-grade flour. Slowly stir the dough with a spoon. When the mixture becomes thick, transfer it onto the working surface and knead by hand. The dough should turn out soft. Knead the dough for about 5 minutes, and to avoid overloading it with extra flour, lightly grease your hands with sunflower oil so the dough won't stick to them.

    Place the finished dough back into the bowl, cover with a clean towel or cloth, and let it sit in a warm place for 1 hour. During this time, the dough should double in volume.
