Sweet pilaf with dried fruits

Description

The recipe won't take much time. We usually prepare this pilaf with whatever we have on hand—typically raisins, apricots, and prunes—but this dish allows for many variations. For example, it turns out delicious with dates, figs, or dried peaches. If desired, you can add nuts or fresh fruits: try pilaf with dried fruits and apples, I'm sure you'll like it! :) To make it easier for you to understand, serve hot.

    First of all, you need to rinse the rice—under a large amount of water until the water becomes completely clear.

    Pour water over it and set aside. Meanwhile, sort and wash the dried fruits. Place in a bowl and pour hot water over them.

    Peel the carrots and cut them into cubes or strips.

    Drain the water from the dried fruits and cut them into small pieces.

    In a saucepan or deep skillet, heat the oil. Slowly sauté the carrots. Add the spices and honey, and cook, stirring, until the carrots begin to caramelize.

    Add the dried fruits, mix. Pour in the rice.

    Pour water over the grain so that it covers it by 1-2 fingers. Cover with a lid and simmer over low heat for about half an hour.

    Try the rice – if it is already cooked, turn off the heat, stir the pilaf, and let it rest, covered, for 10–15 minutes. Stir once more and serve!
