Sweet potatoes with apples
Description
The recipe won't take much time. Preheat the oven to 190 degrees. Arrange the potatoes on a baking sheet. Bake until tender, 1 hour 10 minutes to 1 hour 20 minutes. Remove from the oven and let cool. Cut each potato in half lengthwise. Remove the skin and beat in a bowl with an electric mixer. Add 2 tablespoons of butter and cream, mix at medium speed until smooth. Stir in applesauce and ginger, season with salt and pepper. Transfer the potato mixture to an ovenproof dish. Bake for about 10 minutes. Meanwhile, combine apples with sugar in a bowl. Melt the remaining 2 tablespoons of butter in a large skillet over medium heat. Add the apple mixture and cook, stirring, until the apples turn caramel-colored, about 10 minutes. Remove the potato mixture from the oven, top with the apples, and serve hot.
