Sweet potato with Parmesan

Description

Preheat the oven to 220 degrees. Line a baking sheet with parchment paper or aluminum foil and set aside. In a shallow bowl, mix flour, salt, and pepper. In a separate bowl, whisk egg whites with 2 tablespoons of water. Place Parmesan cheese in another shallow bowl. Dredge sweet potato slices in the flour mixture, shaking off excess. Then dip them into the egg mixture, followed by coating in cheese. Place the sweet potato slices onto the prepared baking sheet. Bake until potatoes are cooked through and golden and crispy, about 25 minutes. Sprinkle with salt if desired, and serve.
