Sweet crêpe roll
Description
The recipe will not take much time. A colorful sweet pancake roll can be served for breakfast or as an afternoon snack. Children will be especially delighted with it — they love such a tender, delicate filling. By the way, you can use pears or quince instead of apples. Serve warm or chilled. Perfect with tea.
Instructions
- 1
Step 1

Prepare the ingredients listed.
- 2
Step 2

Combine all the dough ingredients in a deep bowl and whisk with a whisk. Add vegetable oil and mix; leave for 10 minutes to activate the gluten.
- 3
Step 3

Heat the pan and grease it the first time with vegetable oil. Pour a portion of pancake batter and cook the pancake for about a minute on each side until golden.
- 4
Step 4

Bake all the blini and arrange them on a board, overlapping.
- 5
Step 5

Wash the apples, peel them, and cut them in half. Remove the cores and dice. Transfer to a cauldron or a saucepan with a non-stick bottom, add sugar, and pour in lemon juice. The lemon juice keeps the diced apples from browning.
- 6
Step 6

Simmer without adding water for about 5–8 minutes, so the cut pieces release their juice and the granulated sugar dissolves in it. You should get a caramel.
- 7
Step 7

Spread the apple filling on the blini, leaving one edge without filling. When you roll up the roulade, the filling will settle into that spot.
- 8
Step 8

Roll the pancakes with the filling into a roll, pressing lightly.
- 9
Step 9

Slice the roll into slices and arrange on a plate. Sprinkle with powdered sugar if desired and serve.
