Sweet yeast buns with kefir and milk

Description

The recipe will not take much time. Be sure to add vanillin to the dough—the aroma of the buns will be simply incredible. If you wish, you can deepen the flavor of sweet yeast baked goods with dried fruit, for example raisins or dried apricots. They can be served with tea or coffee.

    Lay out all the ingredients on the table at once. Both the kefir and the milk should be warm (about 30 degrees).

    In a bowl, rub the yeast with your fingers, add one tablespoon of sugar.

    Pour in warm milk and whisk these ingredients until the yeast has fully dissolved.

    Sift 100 grams of flour into the yeast mixture.

    And whisk until smooth — this is the sponge. Cover the bowl with the sponge with a kitchen towel and leave it undisturbed for 30 minutes.

    Now sift the flour in batches and start kneading. I first worked the flour in with a spoon, then began kneading by hand. Watch the dough consistency and add flour carefully as you knead. You may need slightly more or slightly less flour than the amount given.

    In the end you should have a soft dough that is not overworked and does not stick to your hands. Shape the dough into a ball in the bowl, cover the bowl with a kitchen towel, and leave it in a warm place for about an hour and a half to rise. During that time you can give the dough one fold by hand.

    After an hour and a half, the dough has risen a lot in volume, become airy, and is ready for the next steps.

    Divide the dough into several small pieces of equal weight; I divided mine into 8 pieces weighing 90–100 grams each. Roll these pieces into balls for shaping.

    Place the shaped buns on a parchment-lined baking sheet and let them rest for another 15 minutes. Then brush each bun with beaten egg and bake in an oven preheated to 180 degrees for 25–30 minutes.
