They must be freshly picked. Otherwise, sediment may form in the jar and the flavor will be less rich. The sterilization process is also quite important. If it takes less than 1.5 hours, the jars may swell, meaning all your efforts will be wasted. 1. To begin, remove the leaves and silks from the corn. Wash it thoroughly under running water, then let it dry slightly. 2. Meanwhile, sterilize the jars. Large cobs are best packed into 2- and 3-liter jars. 3. Place the corn in the jars, standing it vertically. If desired, you can cut the cobs to pack them more compactly. 4. To make the brine, bring water with salt, sugar, and vinegar to a boil. Simmer for about 2–3 minutes, then remove from the heat. 5. Pour the hot brine over the corn and sterilize the jars. Sweet corn for winter, prepared at home, should be sterilized for about 2–2.5 hours. 6. Then seal the jars and leave them upside down until completely cool. Serve at the table or store in the pantry.
