Baked mackerel in parchment closely resembles hot-smoked fish, yet it's much healthier. There are no particular difficulties in preparing it—everything is simple and quick. Use thick parchment paper if possible; otherwise, wrap the fish in several layers. The mackerel turns out very juicy and delicious.

Gut the mackerel, remove the black membrane from the inside of the belly, take out the gills, and thoroughly wash both inside and outside.
