
Mackerel baked with vegetables in a foil pouch
Description
This valuable fish has long been used in cooking. Mackerel contains up to 16.5% fat, but it is easily digestible, making the fish suitable even for diets. In addition, its meat is rich in vitamin B12, very tender, and slightly sweet. Baked mackerel with vegetables in a cooking bag is an excellent dish for the whole family (even for a late dinner). Due to its high fat content, mackerel can be cooked without adding oil.

1. Since mackerel is quite fatty, it's best cooked on a bed of vegetables in a baking sleeve. In this case, all ingredients cook in their own juices. So, clean the fish and wash it thoroughly.

2. If you have fresh vegetables, that's great, but in this case, frozen ones are used. Mix asparagus, chopped onions and carrots, and add diced potatoes, cabbage, tomato, bell pepper, and eggplant. Adjust the quantity of vegetables to your preference.

3. Season the fish with spices separately (rub them well on the outside and inside). I use common fish herbs. Place the vegetables in a roasting bag and put the fish on top.

4. Evenly distribute all the vegetables into the bag. Tie one end of the bag, then place the fish inside and tie the other end.

5. Place the fish in a preheated oven at 200 degrees for 1 hour. Reduce the heat to 180 degrees and continue baking, periodically checking the baking process.

6. After baking, remove the pouch. Carefully cut it open, as there is steam inside. Let the dish stand for 5 minutes. Then it can be served.
