
Mackerel baked with vegetables
Description
The recipe won't take much time. This fish pairs perfectly with any vegetables served as a side dish. Instead of the suggested vegetables, you can use potatoes. Many rightly consider mackerel the queen of fish due to its excellent taste. It can be prepared in various ways. In this recipe, the fish is baked and simultaneously stewed in sauce in small pots. Serve hot.

1. Mackerel is delicious in any form, but baked together with vegetables it is simply superb! I also use peas, bell peppers, and cherry tomatoes for cooking it.

2. It is best to cut the fish lengthwise and then slice it into pieces.

3. Salt and season the fish to taste.

4. Slice the bell pepper into rings, and cut the tomatoes in half or into quarters.

5. Meanwhile, sauté the onion sliced into rings until golden brown.

6. Then fry the tomatoes and peppers until cooked as well.

7. At the very end, sauté the green peas (I use fresh-frozen ones). Transfer all the ingredients to a baking dish.

8. Place the onion as the last layer, forming a kind of "cap". Pour about 50 grams of water or white wine over it. Put everything into a preheated oven at 200 degrees for about 20–30 minutes.

9. After baking, let the dish cool slightly. You can pour the sauce formed during fish stewing over the top.
