Mackerel with vegetables in the oven
Description
The dish is prepared without unnecessary complications. Mackerel is delicious in any form, especially mackerel with vegetables baked in the oven. The vegetables perfectly complement its flavor. You can add vegetables according to your own preference. I decided to use zucchini, tomato, onion, and garlic, but you can add potatoes, carrots, and so on. Don't be afraid to experiment, especially since baked mackerel goes well with almost any vegetables. The finished dish can be served at the table.

1. This dish requires a minimum of ingredients: mackerel, zucchini, tomato, onion, garlic, salt, and spices. It's better to defrost the fish in advance, but avoid using a microwave to prevent it from losing its shape during baking. Take it out the night before and leave it in the refrigerator or in a cool place.

2. Grind the spices, salt, and pepper in a mortar.

3. Clean and gut the fish, rub it with the ground spice and salt mixture, and also coat it with vegetable or olive oil. Make incisions on the fish, trying to get the spices and oil into the cuts.

4. Chop the onion and garlic.

5. Slice the zucchini and mix it with the spices as well.

7. I have a special baking dish for fish. I place lemon slices on the bottom (you can skip this, but I prefer it this way).

8. Place the fish on top and arrange the vegetables around it. Put it in a preheated oven at 200 degrees and bake for about 35–40 minutes. You can also place everything in a baking bag and take it out 10 minutes before it's done, so a golden crust forms on the fish.
