
Tsar-style Mackerel

Prepare all the ingredients; it's best to boil the eggs in advance.

Fillet the mackerel, removing the small bones.

Grate the carrots on a grater.

Cut the cucumbers. In this recipe they are sliced into rounds, but I would recommend cutting them into sticks—they will look more textured in cross-section.

Slice the eggs into rounds. For a more textured cut, slice the eggs in half lengthwise.

Line the cutting board with a double layer of plastic wrap, place the mackerel fillets on the wrap skin side down, lightly salt and sprinkle with fish seasoning, sprinkle with gelatin, and arrange the carrots and eggs.

Next, arrange a layer of cucumbers and sprinkle gelatin on top.

Cover with the second half of the fillet, lightly salted and sprinkled with fish spices.

Wrap the mackerel tightly in the plastic wrap it was lying on. Add another layer of plastic wrap.

Tie with kitchen twine. Place the fish in boiling water for 20 minutes from the moment it comes to a boil.
