1. First of all, you need to clean the fish. Remove the innards and scales, and if desired, cut off the fins and head. You can also remove the bones right away and grill a boneless fillet.

2. To help the fish absorb the spices better, make small cuts down to the bone. Depending on the size of the mackerel, you may make 3-4 or up to 8 cuts. These pockets can also hold vegetables, such as slices of tomato, bell pepper, or potato.

3. Lemon is an essential ingredient for fish. It is also indispensable in the recipe for mackerel grilled in foil. The lemon should be thoroughly washed and sliced into thin wedges, removing the seeds.

4. Season the fish well with salt and pepper to taste, and insert 1 slice of lemon into each opening. Lightly spray with a small amount of vegetable oil. Wrap the foil tightly to prevent juices from leaking during cooking.
