1. Take the fish, clean it thoroughly of its innards, and remove the head. Rinse under running water and pat dry slightly.

2. With a sharp knife, cut the fish into medium-sized pieces. Do not cut them too large, as lightly salted mackerel for quick home preparation needs to have enough time to cure in 4 hours.

3. Transfer to a deep bowl. Add literally a pinch of salt and pepper, fish seasoning to taste, and a bay leaf. Mix thoroughly so the seasonings are evenly distributed.

4. Also slice the peeled onion into thin rings.

5. Add to the fish and mix thoroughly once again. Meanwhile, combine the salt and sugar and pour in 1 liter of water (if the container is smaller, reduce the proportions accordingly). Bring to a boil, then let cool.

6. Place the fish in a suitable container (a deep plate, jar, or pot, for example), pour the marinade over it. Let the fish marinate for 4 hours.
