
Hot-smoked mackerel
Description
A delicious appetizer for any gathering. I present to you a recipe for hot-smoked mackerel. I'm sure these fish won't leave you indifferent: they're every bit as good as what they sell in stores! So if you love that rich smoky fish flavor that only fish smoked in the fresh air can have, then this recipe is for you. It can be served warm or chilled.

1. Smoke alder chips for half an hour, then add the fish—headless, gutted, and with the large bones removed—and keep it over the coals for half an hour.

2. Make a tray from foil, and make the same kind of "lid" on top as well.

3. From the remaining ingredients, make a marinade and let the fish marinate for 6 hours.

4. Then let the fish dry in the sun for another two hours, then chill it for another hour or two in the refrigerator. Done!
