
Mackerel stuffed with yellow rice

Cook the rice for 10 minutes until half-done. We will stuff the fish from the back side. Wash the fish, trim the side fins, carefully remove the backbone near the head and tail. Remove all rib bones, innards, and gills from the head. Rinse the fish, pat dry with a paper towel. Season with salt and pepper, then set aside.

Mix the cooled rice with chopped dill, 1 tsp of turmeric, and basil. Add lemon and orange juice, and two tbsp of olive oil. Mix thoroughly.

Fill the fish "pocket" with rice stuffing. Add parsley. Generously sprinkle breadcrumbs on top.

Place the fish on a baking sheet lined with parchment paper or foil. Bake in the oven for 20 minutes at 180 degrees.

Mackerel can be served either warm or cold. Be sure to offer guests lemon wedges. Mackerel is a tasty fish on its own, but somewhat fatty. When combined with the rice stuffing, it transfers excess fat to the rice. As a result, the entire dish becomes very well-balanced in flavor.
