Stuffed Mackerel

Description

The recipe won't take long. It'll be a solid addition to your recipe collection. There aren't many mackerel recipes, so this one will come in handy. Usually it's marinated or smoked — here it's something different. I stuff the fish with aromatic spices and vegetables, then pan-fry it.

    Step 1

    Cut off the fish's head, then slit the belly and clean out the innards, wash thoroughly, and if possible remove the bones without damaging the skin. With a sharp knife, make cuts on the outside on both sides down to the bones.

    Peel the ginger root and grate approximately ¼ teaspoon. Peel the garlic and grate it on a fine grater, mix the ginger with the garlic, add salt, 1 teaspoon of vegetable oil, and lemon juice.

    Rub the fish inside and out with the resulting mixture. Place it on a plate, cover, and let stand for half an hour.

    Heat one tablespoon of vegetable oil in a frying pan. Peel and slice the onion, sauté it in the pan, add chopped curry leaves and a red spice mix. Cook for 3–5 minutes over medium heat, stirring constantly.

    Meanwhile, peel the tomato and cut it into small pieces, add to the pan, season with salt and pepper to taste, and cook until a thick paste forms.

    Rub the outside of the fish with part of the prepared mixture, stuff the rest into it, and refrigerate for 20 minutes.

    Heat a grill pan and lay foil on it, then place the fish on the foil. Cook for 7–8 minutes on each side.

    Place the cooked fish on a serving dish and serve with lemon.
