
Hearty bread
Description
The baking is simple and quick. In Russia, rye bread has always been baked. It was much cheaper and more accessible than wheat white bread. Bread made from flour sifted through a sieve was called "sitny" bread. It was much softer and airier than black bread. Sitny bread was quite expensive and usually eaten in wealthy families. People spread honey or jam on it, and overall, sitny bread was considered a symbol of prosperity and wealth. Nowadays, you can buy this bread in any store or bake it at home. Today I'll share a recipe. Serve warm or cooled. Perfect with tea.

Put the yeast into a warmed glass bowl and pour one glass of warm water over it. Place in a warm spot.

The sponge should start to foam and have a strong yeast smell. It will take about 10 minutes for the yeast to become active.

Pour the sponge into a large bowl and add melted butter, sugar, salt, and warm milk.

Knead the dough until smooth; it should be soft and elastic. Cover with a towel and place in a warm spot.

It will take about an hour and a half for the dough to rise. When it doubles in size, punch it down and let it rise for another 30 minutes.

Shape the dough into a loaf and place it in a baking pan. Let it rest for another 15-20 minutes.
