The dish is prepared without unnecessary complications. Jerusalem artichoke syrup is a natural and healthy substitute for white sugar. The cooking temperature can easily be controlled using a kitchen thermometer or by preparing the syrup in a multicooker with adjustable temperature settings. Store this syrup in the refrigerator, preferably for no longer than one week. The finished dessert can now be served.

    Prepare all the necessary ingredients for making syrup from Jerusalem artichoke. Clean the tubers from dirt, thoroughly wash them in hot water with a stiff brush or simply peel. Rinse the tubers and let them dry. Wash the lemon thoroughly with a soft brush in warm water and dry it.

    Grate the Jerusalem artichoke on a fine grater and squeeze out the juice through a triple layer of cheesecloth. Or, extract the juice using a juicer.

    Pour the juice into a saucepan with a thick bottom and place over low heat. Heat to 50 degrees and remove from heat; let the syrup cool completely. Repeat the procedure two more times.

    Cut the lemon in half, squeeze out the juice and strain it. Pour the lemon juice into the prepared syrup and heat again to a temperature of 50 degrees. Pour the hot syrup into sterilized containers, cover and cool.
