Description

There are many ways to preserve this wonderful berry—jams, jellies, marmalades, and so on—but today we're not talking about those. In this recipe, I'll show you how to make syrup from red currants. This is not only a very tasty drink but also a highly useful item in the kitchen. Since the syrup turns out quite thick, in winter I add it to ice cream or cottage cheese, dilute it with water to make a drink similar to compote, or use it to make delicious infusions. Overall, I use this simple red currant syrup recipe quite often and highly recommend you give it a try.

    The first thing we need to do is to remove any debris from the berries, thoroughly rinse them, and then drain the currants in a colander so the berries can dry slightly.

    Now carefully remove the berries from the stems, place the intact ones into a bowl, and discard the damaged ones.

    After that, we sprinkle the currants with sugar and leave them at room temperature until the berries release their juice, which usually takes 6–7 hours. When enough juice has been released, place the pot with currants over heat and warm the mixture, stirring, until the sugar crystals are completely dissolved.

    When the liquid comes to a boil, the currants should be cooked for no more than 5 minutes, remembering to stir the berries.

    Turn off the heat and carefully transfer the berries into sterilized jars using a slotted spoon.

    When all the berries have been placed into the jars, we also pour the syrup into sterilized, previously prepared jars.

    Seal the jars tightly with lids, turn them upside down, wrap them in a blanket, and leave until completely cooled. Then transfer the jars to a cellar or any other cool place.
