Step 1

1. It's better to rinse the dried fruits briefly under running water and dry them thoroughly. Place them in a saucepan or pot, previously pouring 1 liter of water into it. Bring to a boil, then reduce the heat to a minimum. Simmer the date syrup at home for about 2 hours. During this time, the water in the pot should barely cover the dates. Add more water during cooking if it evaporates. Since dried fruits are naturally quite sweet, there's no need to add extra sugar.

2. When the dates have become soft enough, remove the syrup from the heat and let it cool. Then pour the syrup through a clean cheesecloth to strain.

Step 3

3. The dates left in the cheesecloth can still release quite a lot of juice, so the cheesecloth should be thoroughly squeezed, applying considerable force. By the way, the dried fruits can be used for baking.

5. Once the syrup has finished cooking, remove it from the heat and let it cool thoroughly. The cooled syrup will be quite thick, but gently warming it in a water bath will make it liquid again. This syrup is perfect for pancakes and ice cream.
