1. First, you need to peel the zest from 2 lemons. It's not necessary to chop it finely; you can simply cut it off with a knife, but only remove the yellow part. If desired, you can use the zest of 1 lemon and 1 lime.

2. Pour water into a saucepan and bring to a boil. Then add sugar and citrus zest. Simmer the zest in the syrup over low heat for about 5–7 minutes. This simple soda syrup recipe can be enhanced with fresh or frozen berries.

3. In this version, mint is used for a more pronounced aroma. Once the zest has finished cooking, remove the syrup from the heat and add thoroughly washed and well-dried mint. It is not necessary to boil again—the mint will release its aromas perfectly.

4. Juice should be squeezed from all the lemons. Optionally, you can also add juice from 1-2 oranges, for example.

5. The cooled homemade soda syrup should be strained through a sieve or cheesecloth to remove any citrus zest or mint from the final drink. Mix it with juice and stir well.
