
Sea bass in the oven
Description
The dish is prepared without unnecessary complications. If you don't particularly like the smell of fish, you can mask it by using a little dry white wine. Before placing the baking dish in the oven, pour several tablespoons of wine over the vegetables and place the fish on top. In addition to cumin, you can use any herbs to your taste. Rosemary always goes well with fish. The ready dish can be served at the table.

Clean the fish: remove the innards, cut off the fins, and scrape off the scales. I leave the head on. Rub the fish inside and out with salt and pepper, sprinkle with cumin on top, let it sit for a while, and then proceed to prepare the vegetables.

Wash the tomatoes and slice them into rings about two centimeters thick. Peel the onion and slice it into rings as well, but slightly thinner than the tomatoes. Peel the young zucchini and slice it into rounds or cut into random pieces, then lightly sprinkle with salt. On a baking sheet greased with vegetable oil, arrange a bed of vegetables: first the zucchini, then the onion, and finally the tomatoes.

Sear the fish on a hot skillet with vegetable oil for 2 minutes on each side to form a crust. Then place the fish on a bed of vegetables and transfer to the oven.

Bake the fish in the oven for about 20 minutes at 180 degrees. If desired, sprinkle some grated Parmesan over the vegetables 5 minutes before the dish is ready. Place the finished dish on a plate with the fish on top of the vegetables.
