
Sea bass with potatoes in the oven
Description
The dish is prepared without unnecessary complications. Sea fish always takes much less time to cook than potatoes, so be sure to follow the recipe tips and you'll end up with an excellent lunch. Soft, aromatic, and fluffy potatoes along with juicy and tender fish—your dish is ready to be served.

Prepare all the ingredients. Choose fresh fish with clear, transparent eyes, a pleasant smell, and red gills. Peel the potatoes, onion, and garlic, then rinse them.

Slice the potatoes into 3-4 millimeter thick rounds, then add sliced onion cut into half-rings, thinly sliced garlic, and rosemary. Pour in a tablespoon of vegetable oil, add salt, pepper to taste, and your favorite seasoning. Mix everything thoroughly.

Place the potatoes on a baking sheet and put them in a preheated oven at 200 degrees Celsius without convection for 20 minutes.

Meanwhile, clean the fish of scales, remove the innards and gills. Sprinkle it with salt, pepper, and fish seasoning, then drizzle with vegetable oil and wine vinegar or lemon juice.

Rub the fish inside and out with oil, spices, and seasonings, and place rosemary inside the cavity.

After some time, remove the baking sheet from the oven, pierce a couple of potato slices with a knife; if they are half-cooked, place the fish on top and return to the oven for another 30 minutes. This time, reduce the temperature to 190 or 180 degrees—adjust according to your oven.
