
Swiss Carrot Cake

1. Peel the carrots and grate finely. Prepare the remaining ingredients and turn on the oven to preheat to 190 degrees.

2. Carefully separate the egg whites from the yolks. Add half of the sugar to the yolks and beat. Combine the carrots with the almonds, breadcrumbs, and spices, and mix well. Grate the lemon zest and squeeze the juice from half a lemon.

3. Add the yolks to the carrots and beat the whites with the second half of the sugar into a stiff foam.

4. Grease a heat-resistant baking dish with oil and sprinkle with breadcrumbs. Add the egg whites to the "batter," gently mix. Transfer to the dish and place in the oven.

5. The Swiss carrot cake bakes for about 35 minutes. Check for doneness with a toothpick. While the cake is cooling, prepare the icing by mixing powdered sugar with a couple of tablespoons of lemon juice.
