
Swedish apple pie
Description
It goes perfectly with tea and coffee. Swedish apple pie is a very moist and tender apple bake with an appetizing almond crust and an aroma beyond words; it has been hugely popular in our home ever since the day I first made this pie. I know that in Sweden this pie is called a cake, but let’s be objective—it looks more like a pie than a cake. So, let’s make a delicious Swedish apple pie. Serve warm or chilled. Perfect with tea.

Ingredients.

Turn the almonds into flour using a blender or food processor.

Wash the apples, remove the core and peel, and cut into very thin slices.

In a frying pan, bring to a boil about half a glass of water with 1 tbsp sugar.

When the sugar has dissolved, add the apples to the pan and simmer over medium heat for 5 minutes, stirring from time to time.

Beat the butter with the remaining sugar until smooth, on low mixer speed.

Add the egg yolks, separated from the whites, to the butter mixture.

To the same mixture, add lemon (or lime) zest, the juice of half a lemon (or half a lime), and almonds ground to a flour-like consistency.

Mix until smooth and uniform.

Whip the egg whites separately until they form fairly stiff peaks.

Carefully fold the beaten egg whites into the dough.

Put the apples into molds greased with butter.

Lay a layer of dough over the apples. Smooth the top.

Place in an oven preheated to 180 degrees and bake for 45 minutes.
