
Swedish almond cake
Description
Delicious baked treat for the whole family. Many of you have probably tried the Swedish almond cake at IKEA—it's incredibly delicious! You can easily make it at home too. To prepare the Swedish almond cake, you'll need almond flour. If you can't find ready-made almond flour, you can make your own by grinding almonds in a blender. Serve with tea or coffee.

Prepare the ingredients: separate the egg whites from the yolks, grind the almonds into flour (simply blend 200 grams of almonds in a blender into a powder). Prepare a baking sheet; it's better if you have two, line them with parchment paper.

Beat the egg whites into a white fluffy foam, gradually adding 120 grams of sugar. Then carefully add the almond flour and mix with a spatula.

Divide the mixture into two parts for two cake layers. Pour onto a parchment-lined baking sheet (I used a 23 cm diameter pan). Bake in a preheated oven at 175°C for 15 minutes. Once baked, flip the layers, carefully remove the parchment paper, and let them cool.

Mix the egg yolks with 80 grams of sugar and cream. Heat over low heat, stirring with a whisk, until the mixture thickens. Then place it over a cold water bath to cool, and add the butter. Beat the cream with a mixer or blender.

The cake is assembled simply: spread cream on one cake layer, place the second layer on top, then cover the entire cake with cream on all sides. Refrigerate for 3 hours to allow it to soak.

You can decorate the cake with almond petals and your favorite berries.
