
Swedish Sandwich Cake
Description
A tasty appetizer for any gathering. You can use absolutely any bread; our family prefers rye, but toast bread, multigrain bread, and others work too. The result is a cake with two identical layers: bread, spread, cucumber, salmon, lettuce leaves, mustard dressing, and bread again. Before serving, place the cake on a nice platter and garnish the top with pieces of salmon, herbs, and radish. The appetizer is ready. Serve immediately.

1. Trim all crusts from the loaf: from the top and along the sides. Cut the crumb so that you get 3 layers.

2. Soften the butter at room temperature, then blend the butter and marinated herring thoroughly in a blender—this will be the spread-sauce for the cake.

3. Place the first layer, spread it with the prepared mixture, and top with cucumbers cut into thin slices.
