Description

The dish is prepared without unnecessary complications. Shtruli or strudli are juicy rolls made from unleavened dough with a filling, most commonly meat. However, versions with cottage cheese, cheese, or vegetables are also found. Sometimes, regular dumpling dough is used for shtruli. But kefir-based dough is much more tender and delicious. The finished dish can be served at the table.

    Beat the egg into room-temperature kefir, add salt and baking soda, and mix well.

    Add the sifted flour, incorporate the butter, and knead a soft, firm dough. It will be slightly sticky—avoid adding too much flour. Instead, lightly grease your hands and rolling pin with butter when shaping the dough.

    Let the dough rest for a while under the bowl; do not put it in a bag, otherwise it will become too soft.

    For the filling, finely chop the onion, sprinkle with salt, and knead thoroughly by hand until juice is released. Mix the onion with the minced meat, add salt and pepper to taste, and knead well.

    Thinly slice the second onion and grate the carrot on a coarse grater. Heat the oil in the multicooker bowl and lightly sauté the vegetables in "Frying" mode.

    Peel the potatoes and cut them into large pieces. Add the potatoes to the vegetables, season with salt and pepper to taste. Pour in boiling water so that it just covers the potatoes. Bring to a boil and simmer for a couple of minutes.

    Divide the dough into portions and roll each portion into a sheet about one centimeter thick.

    Spread the minced meat in a thin layer, leaving one edge free.

    Cut the roll into 3-centimeter-thick slices.

    Place the struli on top of the potatoes. Add a little more salt and pepper, and put in a couple of bay leaves. Make sure the water barely covers the struli from the bottom. They will be cooked by steaming—this way they won't become mushy. Cook the struli for about 15 minutes in stewing mode. Then switch to the warming mode for about 10 minutes to let the dish finish cooking.

    Serve the strudel hot with potatoes and the sauce that has formed. You can additionally serve homemade pickles or a spicy tomato sauce.
