
Strudels with kefir
Description
The dish is aromatic, hearty, and incredibly delicious! It's worthy of even the most festive table. You can use any meat and freely combine vegetables to your taste. We'll make the dough for the rolls with kefir—very simple, yet the result is excellent! Be sure to try making it yourself.

Prepare all the ingredients.

Cut the meat into portion-sized pieces and fry in a cauldron or any other high vessel with a thick bottom. Add salt and spices to taste during cooking.

Meanwhile, mix the kefir, butter, salt, and baking soda.

Mix and gradually add the flour in parts.

Knead a soft and elastic dough that does not stick to your hands.

Roll out the dough on a greased surface into a rectangle. Brush the top with oil, sprinkle lightly with salt, chopped dill, and pressed garlic. Cut the dough lengthwise into two parts, then crosswise into strips about 2-3 cm wide.

Roll each strip into a small roll and pinch the free edge. Then place the rolls upright and gently press them from the top with your hand.

By that time, the meat should already be cooked. The liquid should have completely evaporated, and the pieces should be slightly browned.

Add the carrot, cut into thin strips, and the onion, sliced into feathers, to the meat.

Sauté everything together until the vegetables are tender.

Then add the shredded cabbage.

Simmer everything together, stirring occasionally, until all ingredients are cooked. Add salt to taste and about 0.5 cup of hot water if needed to prevent the meat and vegetables from burning.

Then, place the potato cut into thick strips on top. Do not mix further at this stage.

Season the potatoes with salt and pepper, add water until it almost completely covers them, and place the dough rolls on top (the water should not cover the rolls; they will essentially be steamed). The rolls should be spaced slightly apart, as they will expand a little during cooking. Bring to a boil, cover with a lid, and simmer over low heat until fully cooked. I determine doneness by checking if the potatoes are ready.

The kefir strudels with cabbage, potatoes, and meat are ready.
