Pumpkin Strudel
Description
Making a pumpkin strudel is no more difficult than a regular pie, and how to do it is described in detail in the step‑by‑step instructions. Cook with pleasure. Serve cooled or slightly warm.
Instructions
- 1
Step 1

Prepare the ingredients for making pumpkin strudel.
- 2
Step 2

Prepare the peeled pumpkin by steaming it, or place it in a microwave‑safe dish and microwave it for 7 minutes.
- 3
Step 3

Add vegetable oil (1 tbsp + 1 tsp) to the water, add a pinch of salt and 0.5 tsp of vinegar.
- 4
Step 4

Mix in the flour gradually, knead the dough, and work it by hand for 7–10 minutes until it becomes very elastic and no longer sticks to the table. Place it in a bag and refrigerate while you prepare the filling.
- 5
Step 5

Thoroughly rinse the raisins and soak them in three tablespoons of strong alcohol, such as brandy. This recipe uses the cream liqueur "Irish Cream".
- 6
Step 6

Place butter in a skillet and fry the breadcrumbs in it.
- 7
Step 7

Transfer the toasted crumbs into a bowl, add the granulated sugar and cinnamon.
- 8
Step 8

Mix well until smooth.
- 9
Step 9

Finely chop or grate the prepared pumpkin, then add 1 tsp of lemon or orange zest.
- 10
Step 10

Lightly dust the work surface of the table with flour and roll the dough out very thin, using your hands to stretch it outward. Austrian housewives' standard for dough thickness is such that you could read a newspaper through it.
- 11
Step 11

Sprinkle a uniform layer of crumbs onto the rolled-out dough, making sure the edges of the dough remain free.
- 12
Step 12

Place the pumpkin on the crumble, then top with raisins.
- 13
Step 13

Fold the edges of the dough inward.
- 14
Step 14

Carefully, trying not to damage the dough, start rolling the roll.
- 15
Step 15

Place the strudel on parchment paper and brush it with an egg and milk mixture.
- 16
Step 16

Bake the strudel for 25–30 minutes at 180 °C. A slightly cooled strudel can be dusted with powdered sugar.
- 17
Step 17

Pumpkin strudel turned out aromatic and very tasty, it pairs perfectly with coffee. I wholeheartedly recommend trying this delicious Austrian pastry!
