
Pear strudel
Description
The pastry is easy and quick to prepare. To give our strudel more interesting flavor notes, we'll add not only pears but also cranberries, hazelnuts, lemon, and cinnamon to the filling. It will turn out absolutely delicious, I assure you! Just don't forget to thaw the dough in advance! :)

Grate the zest and squeeze the juice from half a lemon.

Wash the pears, dry them with a towel, remove the cores, and cut into large slices. Mix with cranberries, ground hazelnuts lightly roasted in a dry skillet, lemon zest and juice, 4 tablespoons of sugar, and cinnamon.

Roll out the dough sheets as thin as possible. It's best to do this on a clean kitchen towel or parchment paper—it will make transferring them easier. Place one sheet of dough over another, overlapping by 15–20 centimeters, to form one large rectangle, and brush with butter.

Place the filling on the dough, leaving about 5 centimeters of space around the edges. Sprinkle the filling with starch.

Carefully roll up the roulade, pinch the edges to seal, and transfer to a baking sheet lined with parchment paper.

Sprinkle with the remaining sugar and bake at 180-200°C for about 40-45 minutes. Once slightly cooled, dust the pear strudel with a mixture of powdered sugar and cinnamon.
