
Cheese pastry strudel with cherry filling
Description
Tip: Do not skip chilling the dough overnight. Chilling makes the dough softer and more pleasant. So plan for the strudel preparation to take a full day, including preparing the filling and dough. The baking is done. Serve at the table.

Mixed cottage cheese, butter, and sugar at low speed using a mixer. Added flour. Continue mixing until the mixture becomes light and smooth.

I dusted the surface where I would roll out the dough with flour to prevent sticking. I rolled the dough into a thick ball. It shouldn't be rolled out flat like a pancake. It should have volume.

Divided the dough into pieces. I got 4 pieces. Then I rolled them out into rectangles and wrapped them in plastic wrap. Left them in the refrigerator overnight (a very important step).

I decided to fill the center with cherries. The night before, I sprinkled them with sugar and left them to thaw. In the morning, I mixed three large spoons of cherry juice with one large spoon of starch. Waited until it boiled. Then I poured the cherries and the remaining juice into the pot.

Took the dough out of the cold. Roll it out to a very thin layer. I did this on a thin cloth. Try to make pieces with even edges. Place the filling in a line, leaving about 4-5 cm of space.

I brush all edges of the dough with egg white. You can also brush around the filling. Then, using a towel, I roll the strudel into a roll.

Place the strudel on the baking sheet very carefully, making sure the seam is facing down. Before turning on the oven, brush the strudel with a mixture of egg yolk and a beaten tablespoon of milk.

30 minutes — and voila, the masterpiece is ready! Set the oven to 180 degrees, no higher. However, before removing, check that the crust is fully baked and a light golden color is visible.
