Description
The gingerbread mixture includes: cinnamon, coriander, star anise, allspice, cloves, anise, nutmeg, and fennel. If the cookies crack or don't hold together, reduce the baking temperature or time. Enjoy your time in the kitchen! A bit about the origin of this pastry's name. According to legend, in 1241, the army of the Golden Horde arrived at the town of Stramberk. During the night, a strong storm erupted and the rising water swept away all the invaders. Only a few sacks of ears remained, which the soldiers used to show the khan as proof of the number of enemies they had killed. Can be served with tea or coffee.

Prepare the necessary ingredients.

Sift the flour and powdered sugar into a bowl. Beat the eggs with a fork, then add liquid honey, spice mixture, citrus zest, and neutralize the baking soda with lemon juice; mix well. Combine the dry and wet ingredients and knead the dough. Wrap it in plastic wrap and refrigerate for at least 2 hours (or overnight).

Divide the finished dough into 4 parts, then each part into 5-6 pieces. Roll them out as thin as possible. You should end up with 10-12 cm diameter flatbreads. Place them on a baking sheet lined with parchment paper and bake in a preheated oven at 180°C for 4 minutes. Keep an eye on your oven. The "ears" may turn darker, depending on the color of the honey and the quality of the flour.

As soon as the flatbreads turn slightly golden, remove them from the oven and quickly shape them into ears. Place them in a shot glass for 1-2 minutes to set the shape. Store the finished "ears" in a dry place.
