It's a delicious, crispy snack. The crispiness comes from the combination of ice-cold water and rice flour—two very important ingredients! Prepare all the necessary ingredients for making spinach in batter.

First, let's prepare the sauce. Peel the apples and cut them into small cubes. Grate the ginger root and crush the spices in a mortar.

In a saucepan, heat the oil and add ginger along with the spices. Add turmeric at the last moment. Fry everything well, stirring constantly. Then add the apples. Once the apples develop a golden crust (after 5–7 minutes), pour in water and add salt. Simmer everything over low heat for about 15 minutes, stirring frequently.

But that's not all! We continue cooking the resulting sauce. To do this, mash the apple pieces with a blender or potato masher, return the mixture back to the saucepan, add sugar, and simmer the sauce over low heat for another 30 minutes.

While the chatni is simmering on the stove, let's prepare spinach in batter. To do this, mix all the necessary ingredients. It's important that the water is ice-cold!! Separate the spinach leaves, rinse them, spread them out, and dip them into the batter.
