
Scottish oat cookies
Description
Perfectly pairs with tea and coffee. This oatmeal cookie is ideal for an English afternoon tea. This recipe yields about two dozen oatmeal cookies. The baked goods are ready. Serve and enjoy.

1. Mix flour, oatmeal, brown sugar, white sugar, salt, and baking soda in a large bowl.

2. Add the butter cut into pieces and mix until the dough resembles coarse crumbs. You can also do this using a pastry cutter.

3. Add icy water and vigorously mix with a fork until the dough becomes uniform. Do not overmix.

4. Place the dough on a lightly floured surface and shape it into a ball. Roll out about a quarter of the dough to a thickness of 8-12 mm.

5. Cut out circles from the dough using cookie cutters, an inverted glass, or a cookie cutter.
