Description

Perfect with tea and coffee. No Georgian feast is complete without traditional bread. Today I will introduce you to one of its varieties – shoti. It is also called the “Warriors’ Bread,” because bread of this shape was convenient to take on military campaigns. Of course, traditionally such bread is baked in toné ovens, but it can also be made at home, as the ingredient list for this bread is the simplest and can be found in any house. The hole in the middle must be made. Through it air escapes and the bread stays flat. It can be served with tea or coffee.

    Prepare all the necessary ingredients.

    Dissolve the yeast in warm water with a pinch of sugar. Let it sit for 10 minutes.

    Add flour and salt, stir.

    Knead a soft dough. Shape it into a ball and place it in a warm spot for 1.5 hours to rise.

    This is how the dough will look after 90 minutes.

    Divide the dough into 2 parts and roll into balls. Cover and place in a warm spot for 15 minutes.

    Stretch each ball lengthwise and shape it into a diamond using your hands. Make a hole in the middle. Cover and let it rest for another 20 minutes.

    Bake in a hot oven at 240‑250 °C for 15 minutes. Remove, cover with a towel, let cool completely and serve.
