
Chocolate cake with custard cream
Description
Delicious baked treat for the whole family. Making a chocolate cake with custard cream will require time, skill, and patience. But the result will exceed all your expectations! First, prepare chocolate sponge cake layers, while the cream will be white. Be sure to use high-fat cream. For decoration, you can use whipped cream and berries.

First, prepare the cake layers: make the dough by mixing two whole eggs, three egg yolks, and sour cream.

Brew coffee in boiling water. Mix 400 grams of sugar, salt, cocoa powder, and baking soda, then pour in the coffee and simmer the mixture over low heat for about 10 minutes. Wait until the mixture begins to bubble.

Remove the mixture from the heat and whisk it to cool it down. Meanwhile, add vanilla extract and vegetable oil.

Then add the egg mixture and whisk. Next, add the flour and mix again until smooth.

Line the baking pan with parchment paper and lightly grease it with butter. It's very convenient to have two pans: you can bake two layers at once. Bake for 30 minutes in a preheated oven at 180°C. Let the baked layers cool down, then slice each one in half. You will end up with 4 layers.

While the cake layers are baking and cooling, you can prepare the cream: mix 11 egg yolks with 180 g of sugar until the sugar dissolves.

Pour in the milk and place the cream over low heat, cooking while stirring constantly. When the cream thickens, add more butter and a tablespoon of vanilla extract. Let the finished cream cool, then you can store it in the refrigerator.

First stage of assembling the cake: the cake layers have cooled down and we've cut them, resulting in 4 layers. The cream has cooled and chilled. Assemble the cake, spreading cream between each layer. Do not spread cream on the top layer. Reserve about 3 tablespoons of the custard cream for decoration. I recommend wrapping the cake in plastic wrap and refrigerating it for 6 hours (or overnight) to let it soak.

After the required time, take the cake out of the refrigerator and the mold, and you can now decorate it.

Whip 200 ml of cream with condensed milk and 3 tbsp of cream. Spread the resulting cream mixture over the entire cake.

You can prepare the glaze yourself or use ready-made glaze from packets. If making it yourself, melt chocolate over a water bath, add hot cream (70 ml), mix until smooth, remove from heat, and add a piece of butter. Once the butter has melted, let the glaze cool.

Pour the cooled glaze over the cake and decorate as desired (for example, with berries). When sliced, it turns out to be this beautiful!
