
Chocolate cake with cherries and cream cheese
Description
Delicious baked goods for the whole family. The incredible flavour pairing of cherry and chocolate is the perfect mix for a vibrant dessert. To keep the cherry filling from turning runny, always add agar-agar or cornstarch while cooking; they thicken the liquid. Serve the chocolate cake chilled with various beverages. Serve cooled or slightly warm.

Prepare the specified ingredients. You can use fresh or frozen cherries.

First, prepare the cherry filling. Place the pitted cherries in a saucepan or pot with a nonstick bottom. Add the sugar and simmer on the stove for about 8–10 minutes. Then add the agar-agar, boil for another 3 minutes over medium heat, and turn off. Cool for 1 hour until thickened.

Beat the chicken eggs with sugar and salt until light and fluffy, about 4–5 minutes.

Add the highest-grade wheat flour and mix, but do not beat. Then add 2 tbsp cocoa powder and mix again.

Grease the pan with vegetable or butter and preheat the oven to 180 degrees. Spread the chocolate batter in the pan and bake the sponge for 30–35 minutes until golden brown. As soon as it is done, remove the pan and lay it on its side so the bake can cool.

When the filling and sponge cake have cooled, you can begin assembling the cake. For this, whip the cream with powdered sugar, cocoa powder, and cream cheese. If you prefer a smooth consistency, you can purée the cream, so there will be no small lumps of cheese.

The cream should hold its shape well. Choose heavy cream with a fat content of at least 33–35%.

Cut the cooled sponge cake horizontally into three layers and spread one third of the cream on the first layer. Spread it evenly and carefully.

Spread part of the cherry filling and cover with the second cake layer. Then spread the cream and cherry filling again, reserving half of the filling to decorate the cake.

Then place the third top layer and spread it with cream, then spread the remaining cherry filling on top. Refrigerate the dessert for at least 2–3 hours to let it soak through.
