Chocolate cake with dulce de leche cream

Description

The recipe will not take much time. For the chocolate cake to turn out well soaked and moist, you need to let it “rest” in the refrigerator for at least 3–4 hours, or preferably 6–8 hours (overnight). If you cannot make the cake in advance, soak each sponge layer with syrup or topping as you assemble the dessert. Decorate the cake to your taste: with cookies, berries, fruit, and so on. It can be served with tea or coffee.

    Prepare the ingredients listed. You may choose the cookies to suit your taste, or use sponge cake crumbs to dust the sides of the cake.

    Crack the chicken eggs into the bowl of a food processor or mixer. Add granulated sugar and salt, and beat on high speed for about 3–4 minutes until thick and foamy.

    Add the cocoa powder and wheat flour in portions, folding them into the mixture without beating. The color of the baked sponge will depend on how rich the cocoa color is.

    Lightly grease the pan with vegetable oil and place the prepared dough in it. Smooth the surface slightly. Preheat the oven to 180 degrees and place the pan on the middle rack.

    Bake for about 25–30 minutes, until a skewer inserted into the center of the sponge comes out clean. Take the tin out of the oven and turn it on its side so the bake can cool.

    When the sponge cake has cooled completely, cut it horizontally into three layers.

    Put the butter and boiled condensed milk in the food processor bowl. You do not need to add sugar or confectioners’ sugar—the cream will already be very sweet.

    Whisk everything for about 2–3 minutes, but no longer, so you do not overwhip the butter.

    Place the bottom cake layer on a plate and spread it with cream.

    Cover with the second cake layer and spread with cream again. Cover with the top layer and frost the whole cake with cream. Chill in the refrigerator for at least 3–4 hours, or preferably overnight.
