Chocolate cake with coconut flakes

Description

When I was making this cake, I was very curious about how the filling would turn out. It's not really a cream at all, but coconut flakes cooked with milk. Strangely enough, it turned out even tastier than the usual custard cream. For a change—it's a fantastic option! And, by the way, it doesn't require that much flour.

    Beat egg whites separately from yolks in a dry bowl. You can add a pinch of fine salt for better stability. Add 6 tablespoons of sugar to the egg whites and beat for another 5 minutes. Mix yolks with 3-4 tablespoons of cocoa. Sift flour with baking powder. Combine with the yolks. Carefully transfer the egg whites into the flour and yolk mixture. Stir everything until smooth, taking care not to deflate the mixture.

    We will need a baking pan. Grease it with vegetable oil or line it with parchment paper. Pour the batter into it. Bake in the oven at 180 degrees for half an hour.

    While the biscuit is baking, prepare the filling. If you have a coconut, you'll need to crack it and grate it finely. Alternatively, you can use ready-made coconut flakes. Adjust the amount according to your preference. Pour milk into a saucepan. Add 6 tablespoons of sugar, 100 g of butter, and the coconut flakes. Gradually heat the mixture, stirring continuously for about 10 minutes, until the mass starts to pull away from the sides of the pan.

    We cut the cooled sponge cake into two parts. Dilute the liqueur with water and soak both cake layers with it. Spread the milk-coconut mixture over the bottom layer, then cover with the second layer on top. For the glaze, pour the remaining milk into a saucepan. Add the remaining sugar and cocoa powder. Cook, stirring constantly, until thickened. Stir in the butter. Pour the slightly thickened chocolate mixture over the top layer, spreading it evenly across the surface. Place the cake in the refrigerator to let the glaze set completely. Serve after a couple of hours. Have a wonderful dinner!
