
Chocolate Terrine
Description
Perfect for the table and for drinks. Chocolate terrine is a dessert recipe for chocoholics. It is the most chocolatey of all the chocolate desserts I’ve tried. Very delicate, with an airy texture—it simply melts in your mouth in the first few seconds. The first time I tried this milk chocolate dessert, I fell in love with it for life. You can make it with all kinds of added ingredients: berries, nuts, dried fruits, and a spoonful of liqueur or cognac adds such aroma and a delicate aftertaste that you can’t stop eating. Today I’m sharing the recipe. It can be served warm or chilled.

Break the chocolate bars into pieces and place them in a double boiler. You can use any chocolate you like.

While the chocolate is melting, separate the egg whites from the yolks. Stir the yolks with a fork, but do not whisk them.

Melt the butter in the microwave; it should be warm and liquid.

Once the chocolate has melted, add the egg yolks in small portions and cook in a double boiler, stirring constantly.

Then add regular sugar and vanilla sugar, liqueur and cream.

Finally, add the butter and cook until the mixture is homogeneous.

Beat the egg whites until stiff peaks form.

Pour the chocolate mixture into a deep bowl and gently fold in the egg whites with a spatula. Add the flour and mix again.

Pour the mixture into a rectangular mold. Place the mold inside another deep mold filled halfway with water. The terrine should be baked in a water bath. Bake in the oven for 50–60 minutes at 160°C.
