
Chocolate Cheesecake with Coffee
Description
Homemade baked goods for tea. If you think it's difficult to make, you're mistaken. It's all very simple and quite quick. It's better to use smooth cottage cheese, not grainy. If you don't have that, sift it through a sieve first. For the base, the simplest “Jubilee”‑type cookies will do. If you don't have pudding, you can replace it with corn starch. Corn, potato, or tapioca starch won't work. If you have a Teflon‑coated pan, you don't need to line it with parchment paper. During cooking the cheese cake will rise, but then will settle—don't worry, that's normal. It can be served with tea or coffee.

Prepare all the necessary ingredients.

Put softened butter, crumbled cookies, and shredded coconut into a bowl. Blend with a blender until smooth.

In another bowl, mix the cottage cheese, sour cream, and eggs until smooth. Add powdered sugar, pudding, and whisk again until smooth.

Melt the chocolate.

Add chocolate and coffee to the cottage cheese mixture and stir until smooth.

Take a pan d=15 cm and line it with parchment paper. Spread the cookie mixture in an even layer over the bottom and sides of the pan.

Transfer the cottage cheese mixture onto the prepared base.

Bake in a hot oven at 180 °C for 50 minutes.
