Chocolate cake with cherries

Description

This recipe won't take much time. Sometimes guests drop in for tea—and you have absolutely nothing to serve with it. In situations like that, a chocolate cherry pie saves me, and I'm happy to share the recipe with you. The pie is essentially very simple to make—you'll need literally 10 minutes of active work, and the rest of the time the pie bakes without you. So while guests are coming in, taking their seats, and so on, you can very quickly whip up a delicious chocolate pie and come across as a magical host or hostess :) I recommend it. I hope this simple chocolate cherry pie recipe will be useful to you. Good luck with cooking. Serve cooled or slightly warm.

    First, let's deal with the cherries. If the cherries are fresh, pit them. If they are frozen, thaw them first (preferably at room temperature, or as a last resort in the microwave on the appropriate setting), then pit them. If you thawed the cherries, don't forget to drain them in a colander so the excess liquid can run off.

    In a bowl, mix the cottage cheese, eggs, and sugar.

    Mash thoroughly with a fork.

    Add the flour, cocoa, and cinnamon. Keep mixing. Neutralize a teaspoon of baking soda with vinegar and add it to the batter as well.

    Finally, gently fold the berries into the dough. Set aside some of the berries for decoration. Mix carefully so the berries don’t turn to mush.

    Pour the resulting batter into a baking dish, preheat the oven to 180°C, and bake for 30 minutes.

    Remove the finished pie from the pan and let it cool slightly on a wire rack.
