
Chocolate cake with rum
Description
Preheat the oven to 160 degrees. Grease a pie pan with butter. Place chocolate and 3 tablespoons of water in a heatproof bowl and set over a saucepan of boiling water. Stir until the chocolate melts. Let it cool slightly. Beat egg yolks and sugar in a bowl with a mixer at high speed for about 3 minutes. Reduce speed and add vanilla and rum. At medium speed, gradually add the chocolate mixture and butter, beating until smooth. Transfer the mixture to a large bowl. Sift flour, cocoa powder, and salt into the mixture and set aside. Beat egg whites in a clean bowl (using an electric mixer). Add to the chocolate mixture. Pour the batter into the prepared pan and bake for about 1 hour and 20 minutes. Remove from the oven and let cool completely in the pan. Just before serving, remove the cake from the pan and dust with powdered sugar.
