Let's start with the chocolate sponge cake; this is the set of ingredients we will need to prepare it. Preheat the oven to 180 degrees in advance.

The egg needs to be beaten with sugar.

Heat the butter in a glass of milk and stir until the butter is completely dissolved.

Slightly cool the milk with butter and pour it into the egg mixture. Mix until the sugar is completely dissolved.

Add cinnamon and cocoa to the resulting mixture. Stir until smooth.

Mix the flour with the baking powder and add it to the mixture. The dough should be smooth and free of lumps.

For baking, you will need a 26 cm springform pan. Line the bottom with parchment paper and lightly grease with a small amount of oil. Pour in the batter and bake in a preheated oven for 15 to 20 minutes, until a toothpick comes out dry. Let the cake cool completely in the pan without removing it.

Cut the pears into random slices and place them in a pan with sugar and a couple of tablespoons of water. Simmer for about 15 minutes until soft.

Meanwhile, soak the gelatin in about 80 ml of water.

Bring the milk (750 ml) with vanilla to a boil, stirring, add the semolina, and cook for about 15 minutes.

While the semolina is cooking, mix the eggs with the remaining part of the milk.

When the semolina is ready, gradually add the eggs and milk mixture in a thin stream, stirring constantly, and cook for about 5 minutes. Keep stirring to prevent the mixture from burning.

Remove the semolina from the heat, add the gelatin, and stir well until completely dissolved. Add the pear with sugar and blend everything with a blender until smooth.

Pour the resulting mixture into a removable mold with a chocolate sponge cake. Leave in the refrigerator overnight until the mousse is completely set.
