
Chocolate cake with apricots
Description
Baked goods are quick and easy to make. If you love chocolate baked goods, be sure to try mixing them with different fruits—for example, with apricots. You can take such a pie to work, to school, on a trip, or serve it in the evening at the table when you gather all your family and loved ones. It can be served with tea or coffee.

Prepare the ingredients listed. Use fresh apricots—frozen ones release a lot of moisture and the pie will not bake through.

Crack the chicken eggs into the bowl of a stand mixer or food processor. Add salt and granulated sugar to the same bowl and beat everything for 4–5 minutes until light and fluffy.

Add the cocoa powder and wheat flour, and gently fold them into the whipped egg mixture—but not with an electric mixer; use a whisk or a silicone spatula instead.

Preheat the oven to 180°C. Grease the pan with vegetable oil or butter and spread the chocolate dough in it. Wash the apricots, remove the pits, and pat the fruit halves dry with paper towels. Arrange them on the dough and put the pan in the oven.

Bake the pie for approximately 25–30 minutes, watching the top and bottom so it does not burn. Check for doneness with a wooden skewer: it should come out dry from the center of the pie.

Remove the tin from the oven and turn it on its side so the pie does not sink. Let cool, then remove from the tin by turning it upside down. Dust with icing sugar or drizzle with syrup and serve.
