
Chocolate chickpea flour cake
Description
The recipe won’t take long. Chickpea flour bakes have a light nutty aroma. They stay fresh for a long time and don’t go stale, because they contain no gluten. You can serve them with tea or coffee.

Prepare the ingredients for making a chocolate pie. If you don’t have coconut milk, you can use any plant-based milk drink.

In a bowl, combine the dry dough ingredients: chickpea flour, sugar, salt, and baking soda. As a sweetener, you can use Jerusalem artichoke syrup or coconut sugar. Whisk the ingredients together until evenly distributed.

Add the coconut milk and melted coconut oil to the dry ingredients. Pour in hot water and add a few drops of flavoring.

Whisk until all the flour is moistened by the liquid and no dry streaks remain.

Grease the pan with a little oil and spread the batter in. Smooth the top and gently tap the pan on the work surface so all the gaps fill in.

Preheat the oven to 180°C. Bake the chickpea pie for 60–80 minutes, depending on the thickness of the crust. After baking, let the pie cool completely on a wire rack.

You can slice the finished pie in half lengthwise and layer it with a glaze made from cocoa powder, coconut oil, and Jerusalem artichoke syrup or sugar. You can also coat the top of the pie with the same glaze.

The pie turns out dense and moist, with a bold chocolate flavour. Very similar in taste and texture to brownies.
