Flourless Chocolate Cake
Description
The recipe won't take much time. Preheat the oven to 140 degrees with a rack in the center. Grease a baking pan with butter. Set aside. Place butter and chocolate in a large heatproof bowl and microwave for 30 seconds, stirring until the chocolate is completely melted. Let it cool slightly. Beat the egg yolks. In a large bowl, beat the egg whites. Gradually add sugar and continue beating. Fold 1/4 of the beaten egg whites into the chocolate mixture, then gently add the remaining whites. Pour the batter into the prepared pan and smooth the surface with a rubber spatula. Bake for 45 to 50 minutes. Let cool completely on a wire rack, then remove from the pan. Serve at room temperature, dusted with powdered sugar. Serve with whipped cream if desired. Serve chilled.
