
Chocolate shortcrust pie with cottage cheese
Description
As with all pies with cottage cheese filling, the key nuance is the consistency of the cottage cheese. It is important that it be moderately moist. If there is excess moisture, it should be left for a while in a colander lined with cheesecloth. Moderate moisture in the cottage cheese will make the filling juicy but not runny and will not spoil the appearance of the baked pastry.

Prepare the necessary ingredients.

Grate the cold butter into a bowl using a coarse grater. Add flour, cocoa, a pinch of salt, baking powder, and sugar.

Rub the butter with the dry ingredients using your hands.

Add the egg. Knead a soft dough. Do not knead for too long so it doesn’t become tough.

Wrap the dough in plastic wrap and leave it at room temperature for 20 minutes.

Prepare the cottage cheese filling. Put the cottage cheese, starch, egg, sugar, and vanillin into a bowl.

After the time has elapsed, divide the dough into two unequal parts. Grease a baking pan or skillet 24–26 cm in diameter with oil. Spread the larger part of the dough over the bottom of the pan, forming small edges.

Place the cottage cheese filling on the dough, stepping back from the edge. Spread it out.

Roll out the reserved portion of the dough into a sheet 0.5 cm thick. Using a cookie cutter, cut out various shapes.
